Ingredients
- ½ cup Coconut Oil - melted
- ¾ cup Dark Chocolate
- ¾ cup Sugar
- 2 Eggs - room temp, lightly beaten
- 2 tsp Vanilla Extract
- 1 ½ TBSP Cornstarch
- ¼ cup Unsweetened Cocoa Powder
- ½ tsp Salt
- 1 tsp Espresso Powder
- ½ cup Chopped Chocolate
Instructions
- Set the oven to 350F, grease and or line an 8x8 pan and set aside.
- In a small bowl sift together the cocoa powder, cornstarch, salt and espresso powder.
- Melt the chocolate and coconut oil together in a saucepan until smooth and glossy.
- In a stand mixer usindusing the whisk attachment, mix the sugar and melted chocolate together on medium speed for 3 minutes.
- Add the eggs and vanilla, mix until mixed and well incorporated, about a minute.
- Fold in the dry ingredients and chocolate chips.
- Bake for 25 minutes until your tester knife has a few crumbs on it, they will finish setting up as they cool.
