Fudgy Coconut Oil Brownies


TIPS

  • Make sure the chocolate and coconut oil melt and combine fully together, so that it's nice and glossy.
  • Do Not overbake!! This is the biggest thing. The more you mix the batter the cakey becomes tough.
  • The better, more high quality chocolate you use the better! Since the chocolate is such an important part of this recipe, it’s the ingredient you taste the most.



BAKED

Knowing when your brownies are baked just depends on the type of brownie you like! I like mine gooey in the middle. Insert a clean knife or toothpick into the middle of your brownies to see if they are done. I like to see wet crumbs clinging to the knife; it makes the most fudgy middle!


PAN

I have a glass 8x8 baking pan that I use for my brownie, mostly because that is the only kind I own right now. My brownies NEVER stick to the pan. The most foolproof way to make sure they don’t stick is to grease the pan, then I use two pieces of parchment paper in the bottom of the pan so that it is super easy to remove from the pan.




Fudgy Coconut Oil Brownies

Ooey gooey fudgy coconut oil brownies that make the perfect dairy free sweet treat! Super easy and quick to make, a crowd pleaser.

Ingredients
  • ½  cup Coconut Oil - melted
  • ¾  cup Dark Chocolate
  • ¾  cup Sugar
  • 2 Eggs - room temp, lightly beaten
  • 2 tsp Vanilla Extract
  • 1 ½  TBSP Cornstarch
  • ¼  cup Unsweetened Cocoa Powder
  • ½  tsp Salt
  • 1 tsp Espresso Powder
  • ½ cup Chopped Chocolate
Instructions
  1. Set the oven to 350F, grease and or line an 8x8 pan and set aside.
  2. In a small bowl sift together the cocoa powder, cornstarch, salt and espresso powder.
  3. Melt the chocolate and coconut oil together in a saucepan until smooth and glossy.
  4. In a stand mixer usindusing the whisk attachment, mix the sugar and melted chocolate  together on medium speed for 3 minutes.
  5. Add the eggs and vanilla, mix until mixed and well incorporated, about a minute.
  6. Fold in the dry ingredients and chocolate chips.
  7. Bake for 25 minutes until your tester knife has a few crumbs on it, they will finish setting up as they cool.
